Cajun Shrimp Sheet Pan Dinner

Ingredients
  

  • 1.5 lbs large shrimp peeled and deveined
  • 12 oz andouille sausage sliced
  • 3 ears corn cut into thirds
  • 1 lb baby potatoes quartered
  • 1 red bell pepper cut into chunks
  • 3 tablespoons olive oil
  • 2 tablespoons Cajun seasoning
  • 3 cloves garlic minced
  • 2 tablespoons butter melted
  • 2 tablespoons fresh lemon juice
  • Fresh parsley and lemon wedges for serving

Method
 

  1. Preheat oven to 425°F. Toss potatoes, sausage, corn, and bell pepper with 2 tablespoons olive oil and 1 tablespoon Cajun seasoning on a large sheet pan.
  2. Roast for 12 minutes until potatoes start to soften.
  3. Meanwhile, toss shrimp with remaining olive oil, Cajun seasoning, and minced garlic in a bowl.
  4. Remove pan from oven, add shrimp, and drizzle everything with melted butter. Return to oven for 5-6 minutes until shrimp are pink and cooked through.
  5. Squeeze fresh lemon juice over everything, garnish with parsley, and serve with extra lemon wedges. Delicious over rice or with crusty bread!
