Cajun Chicken Potatoes

Ingredients
  

  • 2 pounds bone-in skin-on chicken thighs
  • 1.5 pounds baby potatoes halved
  • 3 tablespoons olive oil divided
  • 2 tablespoons Cajun seasoning
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon smoked paprika
  • 3/4 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons fresh lemon juice
  • Fresh thyme or parsley for garnish

Method
 

  1. Preheat oven to 425°F and line a large sheet pan with parchment paper or aluminum foil.
  2. In a small bowl, combine Cajun seasoning, garlic powder, onion powder, smoked paprika, salt, and black pepper.
  3. Pat chicken thighs dry and rub with 1 tablespoon olive oil, then coat generously with the spice mixture; let sit for 10 minutes if time allows.
  4. In a large bowl, toss halved potatoes with remaining 2 tablespoons olive oil and any leftover spice mixture.
  5. Arrange potatoes in a single layer on the sheet pan, then nestle chicken thighs among the potatoes, skin-side up.
  6. Roast for 30-35 minutes until chicken reaches 165°F internal temperature and potatoes are golden and crispy, then drizzle with lemon juice and garnish with fresh herbs before serving.
