Cajun Chicken Alfredo

You will want to make this restaurant-quality dish again and again. Tender Cajun chicken with fettuccine and a silky homemade Alfredo sauce.

Ingredients
  

  • 1 lb chicken breasts sliced thin
  • 2 tbsp Cajun seasoning
  • 12 oz fettuccine
  • 2 tbsp butter
  • 3 cloves garlic minced
  • 1.5 cups heavy cream
  • 1 cup Parmesan grated
  • 1 tbsp olive oil
  • salt and pepper to taste

Method
 

  1. Toss the chicken with Cajun seasoning until well coated.
  2. Heat olive oil in a large skillet over medium-high and cook the chicken 4-5 minutes per side until cooked through; set aside.
  3. Cook the fettuccine in salted water until al dente, then drain.
  4. In the same skillet, melt butter and saute the garlic for 30 seconds.
  5. Pour in the heavy cream and simmer 3-4 minutes, then whisk in the Parmesan until smooth.
  6. Slice the chicken, return it to the pan with the pasta, toss to coat, and season to taste.

Notes

Save a splash of pasta water to loosen the sauce if it thickens too much.
