Butternut Squash Soup 🍂🥣

This velvety butternut squash soup is like a warm hug in a bowl! It's naturally sweet, incredibly creamy without tons of heavy cream, and the perfect thing to make on a chilly fall evening. Plus, it freezes beautifully for easy meal prep!

Ingredients
  

  • 1 large butternut squash about 3 pounds, peeled and cubed
  • 2 tablespoons olive oil
  • 1 large onion diced
  • 2 carrots peeled and chopped
  • 3 cloves garlic minced
  • 1 teaspoon fresh ginger grated
  • 4 cups vegetable or chicken broth
  • 1 cup coconut milk or heavy cream
  • 2 tablespoons maple syrup
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon nutmeg
  • Salt and pepper to taste
  • Toasted pumpkin seeds and fresh herbs for garnish

Method
 

  1. Preheat your oven to 400°F. Toss the cubed butternut squash with 1 tablespoon olive oil, salt, and pepper on a baking sheet. Roast for 25-30 minutes until tender and lightly caramelized.
  2. While the squash roasts, heat the remaining tablespoon of olive oil in a large pot over medium heat. Add the diced onion and carrots, cooking until softened, about 8 minutes.
  3. Stir in the garlic and ginger, cooking for another minute until wonderfully fragrant.
  4. Add the roasted butternut squash to the pot along with the broth. Bring everything to a boil, then reduce heat and simmer for 15 minutes.
  5. Remove from heat and use an immersion blender to puree the soup until completely smooth. (If you don't have an immersion blender, carefully transfer to a regular blender in batches.)
  6. Stir in the coconut milk, maple syrup, cinnamon, and nutmeg. Taste and adjust seasoning with salt and pepper.
  7. Gently reheat if needed, then ladle into bowls and garnish with toasted pumpkin seeds and fresh herbs like sage or thyme.
