Buffalo Chicken Pasta Salad

Ingredients
  

  • 3 cups cooked pasta I love using rotini or penne
  • 2 cups shredded cooked chicken
  • 1 cup celery diced
  • 1 cup carrots julienned
  • 1/2 cup red bell pepper diced
  • 3/4 cup buffalo sauce adjust to taste
  • 1/2 cup ranch or blue cheese dressing
  • 1/2 cup shredded cheddar cheese optional
  • 2 tablespoons chopped green onions
  • Salt and pepper to taste

Method
 

  1. Cook your pasta according to package directions. Drain and rinse under cold water to stop the cooking process.
  2. Set aside.
  3. In a large mixing bowl, combine the shredded chicken with buffalo sauce, making sure the chicken is thoroughly coated.
  4. Add the cooked pasta, celery, carrots, red bell pepper, and shredded cheddar (if using) to the bowl with the chicken. Mix well to combine.
  5. Pour in the ranch or blue cheese dressing and mix until everything is well coated.
  6. Season with salt and pepper to taste.
  7. Sprinkle the chopped green onions on top for that extra burst of freshness.
  8. Chill in the fridge for at least 30 minutes to let the flavors meld together.
  9. Serve cold and enjoy! Perfect for a quick lunch or as a side dish at your next gathering.

Notes

For an extra kick of heat, add a few dashes of hot sauce to the buffalo chicken mixture. This salad can be made ahead of time, just give it a good stir before serving. It's even better the next day after the flavors have had time to mix. Customize the veggies to your liking – add some corn, tomatoes, or even avocados!
