Buffalo Chicken Lettuce Wraps

Ingredients
  

  • 1 pound boneless skinless chicken breasts, cut into bite-sized pieces
  • 1/4 cup hot sauce like Frank's RedHot
  • 2 tablespoons butter melted
  • 1 tablespoon olive oil
  • 2 cloves garlic minced
  • 1 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • Crisp lettuce leaves like Romaine or Butter lettuce
  • 1/2 cup shredded carrots
  • 1/2 cup sliced celery
  • 1/4 cup blue cheese or ranch dressing
  • Fresh parsley for garnish optional

Method
 

  1. Instructions: 1 In a large skillet, heat the olive oil over medium heat.
  2. Add the minced garlic and cook for about 1 minute, until fragrant.
  3. Add the chicken pieces to the skillet and season with paprika, salt, and black pepper. Cook until the chicken is no longer pink and cooked through, about 6-8 minutes.
  4. In a small bowl, mix together the melted butter and hot sauce.
  5. Pour the hot sauce mixture over the cooked chicken and stir to coat evenly.
  6. Continue to cook for another 2-3 minutes, allowing the sauce to thicken slightly and coat the chicken well.
  7. Remove from heat and let the chicken cool for a few minutes.
  8. To assemble, take a large lettuce leaf and fill it with a spoonful of buffalo chicken.
  9. Top with shredded carrots, sliced celery, and a drizzle of blue cheese or ranch dressing.
  10. Garnish with fresh parsley if desired.

  13. You can adjust the heat level by adding more or less hot sauce.
