Ingredients

  • 8 chicken drumsticks about 2 1/2 pounds
  • 1 tablespoon olive oil
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon black pepper
  • 1/3 cup balsamic vinegar
  • 3 tablespoons brown sugar
  • 1 garlic clove minced

Method

  1. Heat oven to 400°F. Pat chicken dry and toss with oil, salt and pepper. Arrange on a foil-lined rimmed sheet pan and roast 30 minutes, turning halfway.
  2. Meanwhile, simmer balsamic vinegar, sugar and garlic in a small saucepan for 4–6 minutes until lightly syrupy; it thickens as it cools.
  3. Brush chicken with glaze and roast 15–20 minutes more until at least 165°F away from bone. Watch for scorching and tent loosely with foil if necessary. Rest 5 minutes.
