Brown Sugar and Dijon Mustard Crusted Ham

A ham with a thick coating of brown sugar and Dijon that bakes into a crunchy, crackly shell.

Ingredients
  

  • 1 bone-in ham 8 lb, fully cooked
  • 1 cup brown sugar
  • 1/3 cup Dijon mustard
  • 2 tbsp apple cider vinegar
  • 1/2 tsp ground cloves

Method
 

  1. Preheat the oven to 325F and score the ham.
  2. Bake covered with foil for 1 hour 30 minutes.
  3. Stir the brown sugar, Dijon, vinegar, and cloves into a thick paste.
  4. Pat the paste all over the ham to form a crust.
  5. Bake uncovered 25 minutes until the crust sets and browns.
  6. Rest 15 minutes, then slice.

Notes

If the crust browns too fast, tent it with foil.
