- Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper.
- In a large bowl, mix together the cooked rice, chopped broccoli, shredded cheddar cheese, grated Parmesan cheese, eggs, garlic powder, onion powder, salt, and pepper until well combined.
- Form the mixture into golf ball-sized balls and roll each ball in breadcrumbs to coat.
- Place the rice balls on the prepared baking sheet, spacing them evenly apart.
- Bake in the preheated oven for 20-25 minutes, or until the rice balls are golden brown and crispy on the outside.
- Remove from the oven and let cool for a few minutes before serving.
