Broccoli and Chicken Stir Fry

The reliable weeknight standy done right with easy and delicious chicken and broccoli.

Ingredients
  

  • 1.5 lb boneless skinless chicken breast sliced thin
  • 4 cups broccoli florets
  • 1/4 cup soy sauce
  • 1 tbsp oyster sauce
  • 1 tsp sugar
  • 2 tsp cornstarch
  • 2 tbsp vegetable oil
  • 3 cloves garlic minced
  • 1 tsp fresh ginger grated
  • 1/4 cup chicken broth

Method
 

  1. Whisk the soy sauce, oyster sauce, sugar, cornstarch, and chicken broth together in a bowl and set aside.
  2. Heat 1 tablespoon oil in a large skillet over medium-high and cook the chicken until cooked through, about 6 minutes. Remove.
  3. Add the remaining oil and the broccoli with 2 tablespoons water, cover, and steam 3 minutes until bright green.
  4. Uncover, add the garlic and ginger, and stir-fry 30 seconds.
  5. Return the chicken, pour in the sauce, and toss until thickened, about 2 minutes.
  6. Serve over rice.

Notes

Steaming the broccoli with a splash of water keeps it crisp-tender, not mushy.
