Brie and Cranberry Puff Pastry Bites

These look like something from a catering menu but they take about twenty minutes to make. The combo of buttery puff pastry, warm melty brie, and tart cranberry sauce is genuinely hard to beat. Perfect for holiday parties or anything where you want to impress without stress.

Ingredients
  

  • 1 sheet frozen puff pastry thawed
  • 4 oz brie cheese rind removed, cut into small pieces
  • 1/3 cup whole berry cranberry sauce
  • 1 egg beaten
  • 1 tbsp fresh thyme leaves
  • 1 tsp honey

Method
 

  1. Preheat oven to 400°F and line a mini muffin tin with parchment squares or spray with cooking spray.
  2. Cut puff pastry into 24 small squares and press each into a mini muffin cup.
  3. Place a small piece of brie in each cup.
  4. Top each with about half a teaspoon of cranberry sauce.
  5. Brush the edges of the pastry with beaten egg.
  6. Bake 12-15 minutes until puffed and golden brown.
  7. Drizzle lightly with honey and sprinkle fresh thyme over the top before serving.
