Ingredients
  

  • 12 large eggs
  • 1/4 cup milk
  • 1 pound breakfast sausage or bacon
  • 1 bell pepper diced
  • 1 cup shredded cheese
  • Salt and pepper to taste
  • 2 tablespoons butter
  • Toast or biscuits for serving

Method
 

  1. Cook the breakfast sausage or bacon in a large skillet over medium heat until fully cooked and crispy. Remove from pan and set aside, leaving a little grease in the pan.
  2. Add diced bell pepper to the same skillet and sauté for 3-4 minutes until softened.
  3. In a large bowl, whisk together eggs, milk, salt, and pepper until well combined.
  4. Add butter to the skillet with the peppers. Once melted, pour in the egg mixture.
  5. Gently scramble the eggs over medium-low heat, stirring frequently, until they're almost set but still slightly wet.
  6. Crumble the cooked meat back into the eggs and sprinkle cheese on top. Stir gently and remove from heat.
  7. Serve immediately with toast or biscuits on the side. Add hot sauce or ketchup if desired!
