Bourbon Vanilla Cheesecake

Warm bourban notes add a cozy, caramel-like depth to this richly vanilla cheesecake.

Ingredients
  

  • 2 cups graham cracker crumbs
  • 6 tbsp butter melted
  • 32 oz cream cheese softened
  • 1.25 cups brown sugar
  • 4 eggs
  • 3 tbsp bourbon
  • 2 tsp vanilla extract
  • 0.5 cup sour cream

Method
 

  1. Preheat the oven to 325F. Press the graham and butter mixture into a springform pan and bake 10 minutes.
  2. Beat the cream cheese and brown sugar until smooth and creamy.
  3. Add the eggs one at a time, then mix in bourbon, vanilla, and sour cream.
  4. Pour over the crust and bake 60-65 minutes until just set with a slight center jiggle.
  5. Cool in the oven with the door cracked for 1 hour.
  6. Refrigerate at least 6 hours before serving.

Notes

The bourbon mellows as it bakes, leaving just a warm caramel undertone.
