Method
- Combine the bourbon, brown sugar, BBQ sauce, and butter in a small saucepan. Simmer for 2 minutes, cool, then divide the glaze between two bowls.
- Thread the shrimp onto soaked skewers and brush with glaze from the first bowl.
- Preheat the smoker to 250°F.
- Smoke for 20 to 25 minutes, brushing only with glaze from the first bowl, until the shrimp are opaque and firm. Discard any glaze left in that bowl.
- Brush the cooked shrimp with the untouched glaze from the second bowl and serve warm.
Notes
Don't over-smoke the shrimp or they'll turn rubbery; pull them as soon as they're pink.
