Blueberry and Goat Cheese Flatbreads

Crisp flatbread with goat cheese and blueberries drizzled with honey.

Ingredients
  

  • 2 flatbreads
  • 4 oz goat cheese
  • 1 cup fresh blueberries
  • 2 tbsp honey
  • 1 tbsp olive oil
  • 2 tbsp fresh thyme

Method
 

  1. Preheat the oven to 400F. Brush the flatbreads with olive oil and place on a baking sheet.
  2. Dot the goat cheese evenly over each flatbread.
  3. Scatter the blueberries on top.
  4. Bake 12 to 15 minutes until the edges are crisp and the cheese softens.
  5. Drizzle with honey, sprinkle with thyme, slice, and serve warm.

Notes

A few cracks of black pepper balance the sweetness beautifully.
