Blackened Tilapia Sheet Pan Dinner

Ingredients
  

  • 4 tilapia fillets about 6 oz each
  • 2 medium zucchini sliced into rounds
  • 1 yellow squash sliced into rounds
  • 1 red bell pepper cut into strips
  • 3 tbsp olive oil divided
  • 2 tsp paprika
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • ½ tsp cayenne pepper adjust to taste
  • ½ tsp dried thyme
  • 1 tsp salt divided
  • ½ tsp black pepper divided
  • Lemon wedges for serving

Method
 

  1. Preheat oven to 400°F and line a large sheet pan with parchment paper.
  2. In a small bowl, combine paprika, garlic powder, onion powder, cayenne pepper, thyme, ½ tsp salt, and ¼ tsp black pepper.
  3. Toss the zucchini, squash, and bell pepper with 2 tbsp olive oil, remaining salt and pepper. Spread on one side of the sheet pan.
  4. Pat the tilapia fillets dry and brush both sides with remaining 1 tbsp olive oil. Generously coat both sides with the blackening spice mixture.
  5. Place the seasoned tilapia on the other side of the sheet pan. Bake for 12-15 minutes, or until the fish flakes easily with a fork and vegetables are tender.
  6. Serve immediately with lemon wedges for squeezing over the fish. Perfect over rice or quinoa!
