Ingredients
  

  • For the Biscuits:
  • 3 cups all-purpose flour
  • 2 tablespoons baking powder
  • 1 tablespoon sugar
  • 1 teaspoon salt
  • 3/4 cup cold butter cubed
  • 1 1/4 cups buttermilk
  • For the Gravy:
  • 1 pound breakfast sausage
  • 1/3 cup all-purpose flour
  • 3 cups whole milk
  • 1 teaspoon black pepper
  • 1/2 teaspoon salt or to taste

Method
 

  1. Preheat oven to 450°F. Line a baking sheet with parchment paper.
  2. For the biscuits: In a large bowl, whisk together flour, baking powder, sugar, and salt.
  3. Cut in cold butter using a pastry cutter or fork until mixture resembles coarse crumbs.
  4. Make a well in the center and pour in buttermilk. Stir just until dough comes together (don't overmix!).
  5. Turn dough onto a floured surface and gently pat to 3/4-inch thickness. Cut out biscuits with a 3-inch cutter.
  6. Place biscuits on prepared baking sheet and bake for 12-15 minutes until golden brown.
  7. For the gravy: While biscuits bake, brown sausage in a large skillet over medium-high heat, breaking it into crumbles.
  8. Once cooked through, sprinkle flour over the sausage and stir well, cooking for 1-2 minutes.
  9. Gradually pour in milk while stirring constantly to prevent lumps.
  10. Bring to a simmer and cook, stirring frequently, until gravy thickens (about 5-7 minutes).
  11. Season with salt and pepper to taste.
  12. Split warm biscuits in half and smother with generous amounts of hot sausage gravy. Serve immediately!
