Birthday Cake Cookies and Cream Cheesecake

Ingredients
  

  • 24 chocolate sandwich cookies crushed
  • 5 tbsp butter melted
  • 32 oz cream cheese softened
  • 1 cup granulated sugar
  • 3 eggs
  • 1 tsp vanilla extract
  • 1/2 cup rainbow sprinkles
  • 8 chocolate sandwich cookies chopped

Method
 

  1. Heat oven to 325F. Press cookie crust into springform pan.
  2. Beat cream cheese and sugar smooth; mix in eggs and vanilla.
  3. Fold in chopped cookies and most sprinkles.
  4. Pour over crust; scatter remaining sprinkles on top.
  5. Bake about 60 minutes until just set.
  6. Cool; chill at least 6 hours before serving.

Notes

Use jimmies, not nonpareils, so the colors don't bleed into the batter.
