Steep the hibiscus tea bags in 2 cups of boiling water for 5 minutes to create a strong concentrate, then remove the tea bags and stir in the honey until completely dissolved. Refrigerate until cold, at least 2 hours or up to 2 days ahead.
When ready to serve, add about 1/4 cup of mixed berries and 4-5 mint leaves to each glass and gently muddle with a muddler or the back of a spoon to release the juices and oils.
Fill each glass with ice cubes, then pour 1/2 cup of the chilled hibiscus concentrate into each glass.
Add 1 tablespoon of fresh lemon juice to each glass, then top with about 3/4 cup of sparkling water and stir gently to combine.
Garnish with additional fresh berries and a sprig of mint, and serve immediately while still bubbly.
