Beef Barley Soup

Ingredients
  

  • 2 pounds beef stew meat cut into 1-inch cubes
  • 1 cup pearl barley uncooked
  • 4 cups beef broth
  • 2 cups water
  • 1 can 14.5 oz diced tomatoes
  • 3 large carrots peeled and sliced
  • 2 stalks celery chopped
  • 1 medium onion diced
  • 3 cloves garlic minced
  • 2 bay leaves
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Method
 

  1. Add the beef stew meat, pearl barley, beef broth, and water to your slow cooker.
  2. Add the diced tomatoes with their juices, carrots, celery, onion, and minced garlic to the slow cooker.
  3. Stir in the bay leaves, thyme, salt, and black pepper until everything is well combined.
  4. Cover and cook on low for 8 hours or high for 4-5 hours, until the beef is tender and the barley is cooked through.
  5. Remove the bay leaves, taste and adjust seasoning if needed, then serve hot with crusty bread.
