Beef and Rice Bowl with Eggs

An easy weeknight beef and rice bowl where eggs get mixed right into the browned beef for extra protein and filling power.
Prep Time 10 minutes
Cook Time 15 minutes
Total Time 25 minutes
Servings: 4 servings

Ingredients

  • 1 lb* ground beef can swap ground chicken or turkey
  • 2* eggs
  • 2 tablespoons* liquid aminos for flavoring
  • 2 cups* brown rice cooked; can swap quinoa or cauliflower rice
  • 1 cup* favorite veggies served on the side

Method

  1. Start with ground beef for the protein - you could easily swap ground chicken or turkey instead.
  2. Cook the beef through and break it apart as it browns.
  3. While that cooks, get your eggs ready, which adds even more protein to make this meal extra filling.
  4. Season the beef however you like - I used liquid aminos for flavoring.
  5. Add the eggs right into the beef.
  6. For the carb, use brown rice - you could also swap quinoa or cauliflower rice.
  7. Then add the beef and egg mixture right on top of the rice.
  8. Add your favorite veggies on the side and dinner is done.
