Beef and Potato Hash

Ingredients
  

  • 1 pound ground beef
  • 4 medium potatoes diced
  • 1 medium onion diced
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons oil
  • Fried or poached eggs for serving (optional)
  • Hot sauce for serving (optional)

Method
 

  1. Heat the oil in a large skillet and cook the diced potatoes in a single layer until crisp and tender, about 12 minutes.
  2. Push the potatoes to the side, add the ground beef and brown it, leaving some of the drippings in the pan.
  3. Add the onion and cook until softened.
  4. Stir everything together with the paprika, salt and pepper and cook a few more minutes until crisp at the edges.
  5. Top with a fried or poached egg and hot sauce if you like.

Notes

Cook the potatoes first since they need more time than the beef. Leave some beef drippings in the pan for a big flavor boost. Do not overcrowd the pan or the potatoes steam instead of crisping - keep everything in a single layer. Paprika adds color and a mild smokiness.
