Beef and Mushroom Skillet

Ingredients
  

  • 1 pound 80/20 ground beef
  • 8 ounces fresh mushrooms sliced
  • 1 medium onion diced
  • 1 10.5-ounce can cream of mushroom soup
  • 1/2 cup milk
  • 1 cup cheddar cheese shredded
  • Salt and pepper to taste

Method
 

  1. Brown the mushrooms in an uncrowded skillet over medium-high heat until deeply golden, then set aside.
  2. Brown the ground beef in the same pan and drain the excess fat.
  3. Add the onion and cook until softened, then return the mushrooms to the pan.
  4. Stir in the cream of mushroom soup and milk and simmer 5 minutes.
  5. Remove from the heat and stir in the cheese until melted.

Notes

Browning the fresh mushrooms first gives much better flavor - crowding the pan steams them instead. Drain the beef fat before adding the soup or the dish gets extremely greasy. Add the cheese off the heat so it melts from residual warmth without breaking or turning rubbery. Swap the canned soup for a homemade roux and broth to cut the sodium.
