Beef and Cabbage Skillet

Ingredients
  

  • 1 pound ground beef
  • 5 cups cabbage chopped
  • 1 medium onion diced
  • 3 cloves garlic minced
  • 1 14.5-ounce can diced tomatoes
  • 1 15-ounce can tomato sauce
  • 2 tablespoons butter
  • Salt and pepper to taste

Method
 

  1. Brown the ground beef properly in an uncrowded skillet, then drain the fat.
  2. Add the onion and garlic and cook until softened.
  3. Add the chopped cabbage and cook until it begins to wilt down.
  4. Stir in the diced tomatoes and tomato sauce and simmer uncovered for 10 to 15 minutes.
  5. Stir in the butter at the end and season with salt and pepper.

Notes

Cabbage wilts dramatically - 4 to 5 cups raw cooks down to much less, so do not be alarmed by the starting volume. Simmering uncovered lets steam escape for a thicker, saucier result. Butter at the end rounds out the acidity from the tomatoes better than oil at the start. Do not overcrowd the pan early; brown the beef properly before adding vegetables. Budget-friendly and low-carb.
