Beef and Broccoli Stir-Fry

Ingredients
  

  • 1 pound ground beef
  • 4 cups broccoli florets
  • 1/4 cup soy sauce
  • 2 tablespoons brown sugar
  • 3 cloves garlic minced
  • 1 tablespoon fresh ginger grated
  • 1 tablespoon cornstarch
  • 1/4 cup water
  • 1 teaspoon sesame oil
  • Cooked rice for serving

Method
 

  1. Brown the ground beef in a large skillet over medium-high heat and drain the fat.
  2. Add the garlic and ginger and cook until fragrant, about 30 seconds.
  3. Add the broccoli and a splash of water, cover and steam 3 to 4 minutes until bright green and just tender with a bite.
  4. Whisk the cornstarch into the water to make a slurry, then stir it in along with the soy sauce and brown sugar.
  5. Simmer 1 to 2 minutes until the sauce thickens and coats the beef and broccoli.
  6. Remove from the heat, finish with the sesame oil and serve over rice.

Notes

Get the cornstarch ratio right - too much gives a gluey sauce, too little leaves it watery. Do not overcook the broccoli or it turns to mush. Sesame oil has a low smoke point, so add it at the end as a finisher rather than cooking with it. Adjust the soy sauce and brown sugar for saltier or more caramelized results.
