- Brown the ground beef in a large skillet over medium-high heat and drain the fat.
- Add the garlic and ginger and cook until fragrant, about 30 seconds.
- Add the broccoli and a splash of water, cover and steam 3 to 4 minutes until bright green and just tender with a bite.
- Whisk the cornstarch into the water to make a slurry, then stir it in along with the soy sauce and brown sugar.
- Simmer 1 to 2 minutes until the sauce thickens and coats the beef and broccoli.
- Remove from the heat, finish with the sesame oil and serve over rice.
Notes
Get the cornstarch ratio right - too much gives a gluey sauce, too little leaves it watery. Do not overcook the broccoli or it turns to mush. Sesame oil has a low smoke point, so add it at the end as a finisher rather than cooking with it. Adjust the soy sauce and brown sugar for saltier or more caramelized results.
