Beef and Bean Rice Burrito Bowl

Ingredients
  

  • 1 lb ground beef
  • 1 packet taco seasoning
  • 1 can 15 oz black beans, drained and rinsed
  • 2 cups cooked white rice
  • 1 cup salsa
  • Optional Toppings: Shredded cheese diced tomatoes, chopped lettuce, sour cream, sliced avocado, chopped cilantro

Method
 

  1. Cook the ground beef in a large skillet over medium heat, breaking it up, until it reaches 160°F. Drain excess fat.
  2. Sprinkle the taco seasoning over the beef and stir for 1 minute.
  3. Stir in the black beans, cooked rice, and salsa and cook until hot throughout.
  4. Divide among bowls and add any desired toppings. Serve immediately.

Notes

You can substitute ground turkey or chicken if you prefer a lighter option. This dish is great for meal prepping—store the beef and bean rice mixture separately and add fresh toppings when serving. Leftovers can be stored in the fridge for up to 3 days and reheated in the microwave or on the stovetop.
