BBQ Honey Garlicky Chicken

Slow cooking thawed chicken in BBQ sauce and garlic makes it tender enough to shred.

Ingredients
  

  • 2 lbs chicken breasts fully thawed before slow cooking
  • 1 cup BBQ sauce
  • 0.25 cup honey
  • 4 cloves garlic minced
  • 1 tbsp apple cider vinegar
  • 1 tsp smoked paprika

Method
 

  1. Place the fully thawed chicken breasts in the bottom of the slow cooker.
  2. Whisk together the BBQ sauce, honey, garlic, vinegar, and paprika, then pour over the chicken.
  3. Cover and cook on low for 6 hours until the chicken is tender and cooked through. Check the thickest chicken pieces with a thermometer and continue only until they reach 165°F and are tender; start checking after 3 hours because thawed breasts may finish before the stated time.
  4. Shred or slice the chicken right in the sauce and stir to coat.
  5. Serve over rice or piled onto buns.

Notes

Reserve a little extra BBQ sauce to brush on after shredding for extra sticky goodness.
Thaw chicken fully in the refrigerator before beginning. The listed time is a planning estimate; thickness and slow-cooker performance vary.
