BBQ Beef and Rice Skillet

Ingredients
  

  • 1 lb ground beef
  • 1 small onion diced
  • 1 cup uncooked white rice
  • 2 cups beef broth
  • 1 cup corn kernels fresh, canned, or frozen
  • 1 cup BBQ sauce
  • 1/2 cup shredded cheddar cheese
  • Salt and pepper to taste
  • Optional: Chopped green onions for garnish

Method
 

  1. In a large skillet, cook the ground beef over medium heat until browned. Drain any excess fat.
  2. Add the diced onion to the skillet and cook until softened, about 3-4 minutes.
  3. Stir in the uncooked rice, beef broth, and corn. Bring the mixture to a boil.
  4. Once boiling, reduce the heat to low, cover, and let simmer for 18-20 minutes, or until the rice is tender and the liquid is absorbed.
  5. Stir in the BBQ sauce and cook for another 2-3 minutes until heated through.
  6. Sprinkle the shredded cheddar cheese over the top. Cover and let the cheese melt, about 2-3 minutes.
  7. Garnish with chopped green onions if desired, and serve hot. Enjoy this smoky and comforting meal!

Notes

You can use ground turkey or chicken instead of beef for a lighter option. Add extra veggies like bell peppers or peas for added nutrition and color. Leftovers can be stored in the fridge for up to 3 days and reheated in the microwave or on the stovetop.
