Baumkuchen

A cake made layer by layer and finished with chocolate glaze to form a crunchy outer layer.
Prep Time 30 minutes
Cook Time 40 minutes
Total Time 1 hour 10 minutes
Servings: 12 slices

Ingredients
  

  • 1 cup butter softened
  • 1 cup sugar
  • 6 eggs separated
  • 1 cup all-purpose flour
  • 1/2 cup cornstarch
  • 1 tsp vanilla
  • 4 oz dark chocolate melted

Method
 

  1. Cream the butter and sugar, then beat in the egg yolks and vanilla until pale and fluffy.
  2. Fold in the flour and cornstarch, then gently fold in the whipped egg whites.
  3. Spread a very thin layer of batter in a lined pan and broil for 2-3 minutes until golden.
  4. Repeat, spreading and broiling thin layer after thin layer until the batter is gone and you have a tall ringed cake.
  5. Cool completely, then pour melted chocolate over the top and sides to glaze.
  6. Slice thin to show off all those beautiful layers inside.

Notes

Watch each layer closely under the broiler so it browns but never burns.
