Banana Pancakes

Three-ingredient pancakes made with mashed bananas and eggs, and no flour required!

Ingredients
  

  • 2 ripe bananas
  • 2 eggs
  • 0.5 tsp cinnamon
  • 1 pinch baking powder
  • 1 tbsp butter for the pan
  • 2 tbsp maple syrup

Method
 

  1. Mash the bananas in a bowl until mostly smooth.
  2. Whisk in the eggs, cinnamon, and baking powder until combined.
  3. Melt the butter in a skillet over medium-low heat.
  4. Pour small rounds of batter and cook for two minutes until bubbles form.
  5. Flip carefully and cook one more minute until golden.
  6. Stack the pancakes and drizzle with maple syrup.

Notes

Keep the pancakes small so they're easier to flip without breaking.
