Ingredients
  

  • 1.5 cups all-purpose flour
  • 1/2 cup rolled oats
  • 2 teaspoons baking powder
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 2 ripe bananas mashed
  • 1.5 cups whole milk
  • 2 large eggs
  • 3 tablespoons coconut oil melted
  • 2 tablespoons maple syrup
  • sliced bananas and maple syrup for serving

Method
 

  1. Preheat your waffle iron and spray with cooking spray.
  2. Whisk flour, oats, baking powder, cinnamon, and salt together in a large bowl.
  3. In another bowl, mash bananas until smooth, then whisk in milk, eggs, coconut oil, and maple syrup.
  4. Fold wet ingredients into dry ingredients until just combined, do not overmix.
  5. Pour batter into the waffle iron according to your iron's instructions and cook until golden and crisp.
  6. Stack waffles and top with sliced bananas and a drizzle of maple syrup.
