Banana Cream Cheesecake

A banana-flavored cheesecake that is creamy, has fresh slices of banana and is topped with whipped cream.

Ingredients
  

  • 2 cups vanilla wafer crumbs
  • 6 tbsp butter melted
  • 32 oz cream cheese softened
  • 1 1/4 cups granulated sugar
  • 4 eggs room temperature
  • 1 cup mashed banana very ripe
  • 1/2 cup sour cream
  • 1 tsp vanilla extract
  • 2 bananas sliced, for topping

Method
 

  1. Heat oven to 325F. Press wafer crumbs and butter into a springform pan, bake 10 minutes, and cool.
  2. Beat cream cheese and sugar smooth, then blend in the mashed banana.
  3. Add eggs one at a time, mix in sour cream and vanilla, and pour over the crust.
  4. Bake 60 to 70 minutes until just set, cool in the cracked oven 1 hour, then chill 6 hours.
  5. Top with whipped cream and fresh banana slices right before serving.

Notes

Toss the banana slices in a little lemon juice so they don't brown.
