Balsamic Chicken Sheet Pan Dinner

Ingredients
  

  • 4 boneless skinless chicken breasts (about 1½ pounds)
  • 3 tablespoons balsamic vinegar
  • 2 tablespoons olive oil
  • 2 tablespoons honey
  • 3 cloves garlic minced
  • 1 teaspoon dried Italian seasoning
  • 1 pound baby potatoes halved
  • 2 cups cherry tomatoes
  • 1 red onion cut into wedges
  • Salt and pepper to taste
  • Fresh basil for garnish

Method
 

  1. Preheat your oven to 425°F and line a large sheet pan with parchment paper or lightly grease it.
  2. In a small bowl, whisk together balsamic vinegar, olive oil, honey, minced garlic, Italian seasoning, salt, and pepper.
  3. Place chicken breasts on the sheet pan and brush with half of the balsamic mixture.
  4. Arrange potatoes, cherry tomatoes, and red onion wedges around the chicken. Drizzle the remaining balsamic mixture over the vegetables and toss to coat.
  5. Bake for 20-25 minutes, or until chicken reaches an internal temperature of 165°F and potatoes are fork-tender.
  6. Remove from oven, let rest for 5 minutes, garnish with fresh basil, and serve immediately.
