Baked Turkey Meatballs with Tzatziki

These are the lighter option that doesn't taste like it's trying to be healthy. Ground turkey with herbs and lemon gets baked until golden and served with cool, creamy tzatziki. They're fresh, bright, and way more fun than a veggie tray.

Ingredients
  

  • 1.5 lbs ground turkey
  • 1/3 cup breadcrumbs
  • 1 egg
  • 3 cloves garlic minced
  • 2 tbsp fresh parsley chopped
  • 1 tsp dried oregano
  • 1/2 tsp lemon zest
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 cup store-bought or homemade tzatziki for serving
  • Lemon wedges for serving

Method
 

  1. Preheat oven to 400°F and line a baking sheet with parchment.
  2. Combine ground turkey, breadcrumbs, egg, garlic, parsley, oregano, lemon zest, salt, and pepper in a bowl and mix gently.
  3. Roll into 1.5-inch balls and place on the prepared sheet.
  4. Bake for 18-20 minutes until cooked through and lightly golden.
  5. Serve warm with tzatziki sauce and lemon wedges.
