Ingredients
  

  • 3 cups cooked turkey diced
  • 2 cups cooked white or brown rice
  • 1 can 10.5 oz cream of mushroom soup
  • 1 cup sour cream
  • 2 cups frozen mixed vegetables
  • cups shredded cheddar cheese divided
  • 1 cup chicken broth
  • 1 teaspoon garlic powder
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ½ cup breadcrumbs or crushed crackers

Method
 

  1. Preheat your oven to 350°F and grease a 9x13-inch baking dish.
  2. In a large bowl, combine turkey, rice, cream of mushroom soup, sour cream, mixed vegetables, 1 cup of cheese, chicken broth, garlic powder, salt, and pepper. Mix until everything is well combined.
  3. Pour the mixture into your prepared baking dish and spread it out evenly.
  4. Cover with foil and bake for 25 minutes.
  5. Remove the foil, top with remaining ½ cup cheese and breadcrumbs, and bake uncovered for another 10 minutes until golden and bubbly.
  6. Let it rest for 5 minutes before serving. Enjoy with a simple side salad!
