Baked Spinach and Feta Turkey Meatballs

These feel lighter but they taste rich and satisfying thanks to the feta and spinach mixed right in. They're a great option when you want something a little different from the usual and they're naturally lower in calories. Fresh, bright, and really easy to make ahead.

Ingredients
  

  • 1.5 lbs ground turkey
  • 1 cup baby spinach finely chopped
  • 1/2 cup crumbled feta cheese
  • 1 egg
  • 1/4 cup breadcrumbs
  • 2 cloves garlic minced
  • 1 tsp dried oregano
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 2 tbsp olive oil
  • Lemon yogurt dip or tzatziki for serving

Method
 

  1. Preheat oven to 400°F and line a baking sheet with parchment.
  2. Combine ground turkey, chopped spinach, feta, egg, breadcrumbs, garlic, oregano, salt, and pepper in a bowl.
  3. Roll into 1.5-inch balls — the mixture will be a bit soft, which is fine.
  4. Place on the prepared baking sheet and brush lightly with olive oil.
  5. Bake for 20-22 minutes until golden and cooked through.
  6. Serve with tzatziki or lemon yogurt dip.
