Baked Low-Carb Zucchini Meatballs

These use grated zucchini instead of breadcrumbs and they stay incredibly moist and tender because of it. Nobody would guess they're lighter and honestly they might just be better than the original. Great for guests who are eating low-carb but you'll want to eat them too.

Ingredients
  

  • 1.5 lbs ground beef or turkey
  • 1 cup zucchini finely grated and squeezed dry
  • 1/4 cup grated Parmesan
  • 1 egg
  • 2 cloves garlic minced
  • 1 tsp Italian seasoning
  • 1/2 tsp onion powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • Marinara or pesto for serving

Method
 

  1. Preheat oven to 400°F and line a baking sheet with parchment.
  2. Grate zucchini and wrap in a clean towel, squeezing out as much moisture as possible.
  3. Combine ground meat, squeezed zucchini, Parmesan, egg, garlic, Italian seasoning, onion powder, salt, and pepper and mix until just combined.
  4. Roll into 1.5-inch balls and place on the prepared sheet.
  5. Bake for 20-22 minutes until golden and cooked through.
  6. Serve with marinara or pesto for dipping.
