Baked Eggs in Marinara

Shakshuka by another name, and honestly one of the easiest things you can make for a group. Everything simmers in one pan and you crack the eggs right in. Serve it with crusty bread and people think you really cooked.

Ingredients
  

  • 1 tbsp olive oil
  • 1 small yellow onion diced
  • 3 garlic cloves minced
  • 1 tsp cumin
  • 1 tsp smoked paprika
  • 1/4 tsp cayenne pepper
  • 1 can 28 oz crushed tomatoes
  • 6 large eggs
  • Salt and pepper to taste
  • Fresh parsley chopped, for garnish
  • Crusty bread for serving

Method
 

  1. Heat olive oil in a large deep skillet over medium heat. Sauté onion for 4 minutes, then add garlic and cook 1 minute more.
  2. Stir in cumin, smoked paprika, and cayenne. Toast spices for 30 seconds.
  3. Pour in crushed tomatoes, season with salt and pepper, and simmer for 10 minutes, stirring occasionally.
  4. Use a spoon to create 6 small wells in the sauce. Crack one egg into each well.
  5. Cover the pan and cook for 6 to 8 minutes until egg whites are set but yolks are still slightly runny.
  6. Garnish with fresh parsley and serve immediately with crusty bread for scooping.
