Baked Cajun Chicken Spaghetti

For the ultimate comfort-food casserole, creamy Cajun chicken and spaghetti is baked under a melted cheese blanket.

Ingredients
  

  • 1 lb chicken breast cooked and shredded
  • 2 tbsp Cajun seasoning
  • 12 oz spaghetti
  • 1.5 cups heavy cream
  • 1 can cream of mushroom soup
  • 2 cups shredded cheddar
  • 1 onion diced
  • 2 tbsp butter

Method
 

  1. Preheat the oven to 375F and cook the spaghetti until just under al dente, then drain.
  2. Saute the diced onion in butter until soft, then stir in the Cajun seasoning, cream, and cream of mushroom soup.
  3. Fold in the shredded chicken, half the cheddar, and the cooked spaghetti.
  4. Spread the mixture into a greased baking dish and top with the remaining cheddar.
  5. Bake 25-30 minutes until bubbly and golden, then let it rest 5 minutes before serving.

Notes

Assemble it ahead and refrigerate, then add 10 minutes to the bake time.
