Ingredients
Method
- Preheat your oven to 375°F.
- Core 4 medium apples (Honeycrisp or Fuji work best) from the top, leaving the bottom intact to create a cup.
- Use a spoon to widen the cavity slightly, removing some of the flesh to make room for filling.
- Mix walnuts, erythritol, 1 tablespoon melted butter, cinnamon and nutmeg.
- Stuff each apple cavity with the nut mixture, packing it in gently.
- Place the stuffed apples in a baking dish and add ¼ cup of water to the bottom of the dish.
- Divide remaining tablespoon butter into four pieces and put one on each apple.
- Cover the dish with foil and bake for 30 minutes.
- Remove the foil and bake for another 15-20 minutes until the apples are tender when pierced with a knife and the tops are lightly browned.
- Let cool for 5 minutes before serving.
- Serve with optional yogurt.
