Ingredients
Method
- Preheat your oven to 375°F.
- Core 4 large apples (Granny Smith or Honeycrisp) from the top, leaving the bottom intact to create a cup.
- Use a spoon to widen the cavity slightly.
- In a small bowl, mix together ½ cup of dried cherries (no sugar added), ¼ cup of chopped walnuts, 1 tablespoon of erythritol, 1 teaspoon of cinnamon, and 1 tablespoon of melted butter.
- Stuff each apple cavity with the cherry-walnut mixture, packing it in gently.
- Place the stuffed apples in a baking dish.
- Drizzle each apple with ½ teaspoon of vanilla extract.
- Add ¼ cup of water to the bottom of the baking dish.
- Cover with foil and bake for 30 minutes.
- Remove the foil and bake for another 15-20 minutes until the apples are tender and the cherries are plump.
- Spoon the pan juices over the apples once or twice during the final baking time.
- Let cool for 5 minutes before serving.
- Serve with optional plain Greek yogurt.
- Drizzle with the syrup from the bottom of the pan for extra flavor.
