Preheat your oven to 375°F. Core the apples, leaving the bottom intact to create a well for the filling.
In a small bowl, mix together brown sugar, pecans, cranberries, cinnamon, and nutmeg.
Place apples upright in a 9x13-inch baking dish. Stuff each apple generously with the sugar mixture.
Top each apple with a small piece of butter, then pour apple cider around the apples in the baking dish.
Bake for 40-45 minutes, basting with the cider every 15 minutes, until apples are tender when pierced with a fork.
Let cool slightly and serve warm, spooning the cider sauce from the pan over each apple.
