These little bites of heaven are the perfect way to kick off any fall gathering! Sweet, savory, and utterly addictive, they disappear faster than you can say "just one more." Trust me, even the pickiest eaters in your family will be reaching for seconds.

Ingredients
  

  • 24 Medjool dates pitted
  • 12 slices bacon cut in half
  • 4 oz goat cheese softened
  • 2 tablespoons honey
  • 1/4 teaspoon cinnamon
  • 1/4 cup chopped pecans
  • 24 toothpicks
  • Fresh thyme leaves for garnish optional

Method
 

  1. Preheat your oven to 400°F and line a baking sheet with parchment paper or aluminum foil for easy cleanup.
  2. In a small bowl, mix together the goat cheese, honey, cinnamon, and chopped pecans until well combined.
  3. Make a small slit in each date lengthwise and gently open it up like a little pocket.
  4. Stuff each date with about 1 teaspoon of the goat cheese mixture, then gently press closed.
  5. Wrap each stuffed date with a half slice of bacon, securing it with a toothpick.
  6. Place the wrapped dates seam-side down on the prepared baking sheet, spacing them about an inch apart.
  7. Bake for 15-18 minutes, flipping halfway through, until the bacon is crispy and golden brown.
  8. Let them cool for just a few minutes before serving (the filling will be hot!), then garnish with fresh thyme if desired.
