Bacon-Stuffed Mushrooms

Stuffed mushrooms are one of those appetizers that looks like a ton of work but honestly comes together fast. The bacon and cream cheese filling is savory and rich — just one or two bites and people are happy. Make them ahead and bake when guests arrive.

Ingredients
  

  • 24 large cremini mushrooms stems removed and reserved
  • 6 strips bacon cooked and crumbled
  • 8 oz cream cheese softened
  • 1/4 cup grated Parmesan cheese
  • 2 cloves garlic minced
  • 2 tbsp fresh parsley chopped
  • 1/4 tsp black pepper
  • 2 tbsp breadcrumbs

Method
 

  1. Preheat oven to 375°F and lightly oil a baking sheet.
  2. Finely chop the reserved mushroom stems and sauté in a pan with a drizzle of oil for 3-4 minutes until softened.
  3. Mix sautéed stems with cream cheese, Parmesan, bacon, garlic, parsley, and black pepper.
  4. Fill each mushroom cap with a heaping mound of the filling.
  5. Sprinkle breadcrumbs over each stuffed mushroom.
  6. Bake for 20 minutes until mushrooms are tender and tops are golden.
