Bacon Beef Quick Chili

Ingredients
  

  • 6 slices bacon chopped
  • 2 pounds ground beef
  • 1 large onion diced
  • 3 cloves garlic minced
  • 3 tablespoons chili powder
  • 1 tablespoon ground cumin
  • 1 teaspoon oregano
  • 1/4 cup brewed coffee
  • 1 can 28 oz crushed tomatoes
  • 2 cans 15 oz each pinto beans, drained and rinsed
  • 1 can 4 oz diced green chiles
  • 1 cup beef broth
  • 1 tablespoon brown sugar
  • Salt and black pepper to taste

Method
 

  1. In a large pot over medium heat, cook chopped bacon until crispy, about 6-8 minutes. Remove bacon with a slotted spoon and set aside, leaving the drippings in the pot.
  2. Increase heat to medium-high and add ground beef to the bacon drippings. Cook until browned, breaking up with a spoon, about 6-7 minutes.
  3. Add onion and garlic, cooking until softened, about 4 minutes. Stir in chili powder, cumin, and oregano, cooking for 1 minute.
  4. Pour in coffee, crushed tomatoes, pinto beans, green chiles, beef broth, and brown sugar. Stir in the reserved bacon.
  5. Bring to a boil, then reduce heat and simmer for 30 minutes, stirring occasionally, until chili has thickened.
  6. Season with salt and black pepper to taste. Serve immediately with cornbread or tortilla chips.
