Bacon and Onion Tartlets

Pastry shells that have been flaky contain custard and bacon that has been caramelized along with savory onions.

Ingredients
  

  • 1 sheet puff pastry thawed
  • 6 slices bacon chopped
  • 1 large onion thinly sliced
  • 2 eggs
  • 0.5 cup heavy cream
  • 0.5 cup shredded Gruyère

Method
 

  1. Preheat oven to 375F and grease a mini muffin tin.
  2. Cook chopped bacon until crisp, then soften the onions in the drippings until golden.
  3. Cut pastry into squares and press into the muffin cups.
  4. Whisk eggs, cream, and Gruyère, then stir in bacon and onions.
  5. Spoon the filling into each pastry cup.
  6. Bake 22 to 25 minutes until puffed and set, then cool slightly before removing.

Notes

Run a knife around the edges before lifting them out so the pastry stays intact.
