Avocado Toast with Poached Eggs

This is the one that looks like you went to brunch at a nice café without actually leaving your house. Poaching eggs sounds scary but it really isn't once you do it once. Make a big avocado mash and set up a little station.

Ingredients
  

  • 4 thick slices sourdough bread toasted
  • 2 large ripe avocados
  • Juice of 1 lemon
  • Salt pepper, and red pepper flakes to taste
  • 4 large eggs
  • 1 tbsp white vinegar
  • Everything bagel seasoning for garnish
  • Microgreens or arugula for serving

Method
 

  1. Mash avocados with lemon juice, salt, and pepper in a bowl until creamy with some texture. Set aside.
  2. Bring a medium pot of water to a gentle simmer. Add white vinegar.
  3. Crack each egg into a small cup. Create a gentle swirl in the water and slide an egg in. Poach for 3 minutes. Repeat or do two at a time.
  4. Remove poached eggs with a slotted spoon and drain briefly on a paper towel.
  5. Spread avocado mash generously on each toast. Top each with a poached egg.
  6. Sprinkle with everything bagel seasoning, red pepper flakes, and a handful of microgreens.
