Asian-Inspired Chicken Wonton Soup

A gentle homemade broth flavored with ginger with chicken wontons and bok choy.

Ingredients
  

  • 1/2 lb ground chicken
  • 20 wonton wrappers
  • 6 cups chicken broth
  • 2 tbsp soy sauce
  • 1 tbsp ginger grated
  • 2 baby bok choy halved
  • 2 green onions sliced
  • 1 tsp sesame oil

Method
 

  1. Mix the ground chicken with half the ginger, 1 tablespoon soy sauce, and the sesame oil.
  2. Place a teaspoon of filling in each wonton wrapper, wet the edges, and fold into triangles.
  3. Simmer the broth with the remaining ginger and soy sauce.
  4. Drop in the wontons and cook 5 minutes until they float and are cooked through.
  5. Add the bok choy for the last 2 minutes, then serve topped with green onions.

Notes

Freeze extra wontons on a tray, then bag them for a quick future dinner.
