Apple Cider Meatballs

Slow-cooked tender meatballs in a glaze of reduced apple cider and brown sugar.

Ingredients
  

  • 1 lb ground beef
  • 0.5 cup breadcrumbs
  • 1 large egg
  • 1.5 cups apple cider
  • 2 tbsp brown sugar
  • 1 tbsp apple cider vinegar
  • 1 tbsp cornstarch

Method
 

  1. Mix the beef, breadcrumbs, and egg, then roll into small meatballs.
  2. Brown the meatballs in a skillet over medium heat.
  3. Add the apple cider, brown sugar, and vinegar and simmer 15 minutes.
  4. Stir the cornstarch with a splash of water and add to thicken the glaze.
  5. Toss the meatballs in the glaze and serve warm with toothpicks.

Notes

Reducing the cider first deepens the apple flavor.
