Apple Cider Dumplings

Tender biscuit-wrapped poached apple chunks in a spiced apple cider.

Ingredients
  

  • 1 can refrigerated biscuit dough
  • 2 apples cut into 12 chunks
  • 2 cups apple cider
  • 1/4 cup brown sugar
  • 1/2 tsp cinnamon
  • 1/4 tsp nutmeg
  • 2 tbsp butter

Method
 

  1. Flatten each biscuit and wrap it around an apple chunk, sealing well.
  2. Bring the cider, brown sugar, cinnamon, nutmeg, and butter to a gentle simmer in a wide pot.
  3. Lower the dumplings into the simmering cider seam-side down.
  4. Cover and simmer 18 to 20 minutes until the dough is cooked through.
  5. Spoon the dumplings out and drizzle with the reduced cider sauce.
  6. Serve warm.

Notes

Reduce the leftover cider a few more minutes for a thicker glaze.
